cake recipe please?

My neighbour V visited me this afternoon, just as I was about to go to her home, so we sat in my recliners and chatted and laughed and I got to put off the vacuuming again. Yay!

Anyway, she mentioned a birthday cake M had a couple of years ago, M couldn't eat all the leftovers herself and gave a slab to V.

A sponge cake flavoured with Angelica. 
Yes, that's right, flavoured with not decorated with.

V asked today if I could possibly find a recipe online.

Well, that could take me forever... and most recipes I've found so far have to do with crystallised angelica used for decorating, there's nothing out there suggesting a sponge cake flavoured with the angelica.

So if anyone out there knows of one, please post it here or on your own blog if you prefer and I'll come on over and read it there. You'll have to leave a link.

Of course if I do find a recipe, I'm going to have to make it for her, V is 83 and has never baked a cake in her life.

  1. I baked my first cake from scratch at the age of 13. I assume V is not a teenager. How can she have never had make a cake, even from a packet mix?

Andrew; born and raised in Switzerland, high on a mountain then educated mostly in an orphanage/boarding school for girls where conditions were very harsh and after that travelling, making puppets, doing puppet shows. Came to Australia in the 60s or 70s and is a vegetarian, eats mostly fruits and soups. Never developed a sweet tooth, but enjoys cakes and treats that others, like me, give to her. She is 83 or maybe 82.

    1. Joanne; this is why V now wants a recipe. She planted some angelica after eating the cake and the plant is now full grown and ready to flower.

  4. Seems easy enough to me, just pour a cup or two into a regular cake recipe, then my wife told me I was thinking of frangelico...oops. Never heard of angelica; but the more I think of it, adding frangelico might be really good.

    1. joeh; I think a cup or two would be far too much, flavourings are usually added in teaspoon measures, but I like your Frangelico idea.

    1. Arkansas Patti; angelica is a plant whose green stems are usually crystallised and used in cake decorating.

  6. No help from here either. I have known people who have never baked, and feel a tad sorry for them. Home baked tastes wonderful - and makes the kitchen smell incredible.

    1. Lee; just adding seems like a good idea, but is the flavour strong enough to be noticed that way? I've never used angelica myself. I'll try the links, thank you.

  11. No point in me giving you any cookery tips - you might end up poisoning your poor neighbour! Even so, I had never baked a cake until a couple of years ago and now I can knock out a cupcake with the best of them. Tell your neighbour, it's never too late!

    1. Around My Kitchen Table; at 83 I don't think she wants to start buying baking tins etc, I think she just wants people to bake for her now and again. I often take a little something along to have with a cup of tea when I visit her, that's probably what started her off. I may have to casually mention how expensive some ingredients are and not take cake or biscuits for a while. I will still keep looking for recipes though.

  13. I had never heard of Angelica, so I found this intriguing and did a bit of Googling. Here are two sites with information, not recipes - the first is a bit of information on ways the different parts of the plant can be used, including grinding the roots into flour (is it possible V had cake made from Angelica flour?) and the second mentions that it is used in making liqueurs (could the cake have been made with a liqueur)? With so many possibilities, it may be hard to reproduce what V had previously!

    2. jenny_o; it's possible a liqueur was used, I'll have to ask around at the bottle shops here, see if I can find it. Then I just need to substitute it for Angostura Bitters in another sponge cake recipe I have, which I always make without the Angostura anyway. Thanks for the sites.
