Red velvet is essentially a rich chocolate cake with red food colouring added to the mix. When featured alongside the regular wedding cake, it seems they've been made specifically so the groom gets a cake that isn't all flowery and what not, while presumably not enraging the bridge by giving her a cake she doesn't want. Often in the shape of sporting equipment, or done in darker icings. My mum's recipe used milk coffee biscuits, but you had to soften them first.
