Remember when a roast chicken dinner was a Christmas luxury?

 That may soon happen again. I read in the paper today, and heard on the news, the price of chicken is rising. 

The cost of feeding and maintaining the flocks is about $45million per year apparently and the breeders have to raise the prices to keep afloat. 

So all of you who enjoy a chicken *parmie at your local pub are going to have to dig a little deeper into your pockets. 

Me? I'll continue to buy an occasional bulk pack of chicken breasts and make a freezer load of chicken schnitzels, just like I did this morning. Five chicken breasts, $17.55 and I have 16 meals in the freezer. When the prices get to be too high, I will buy smaller packs and eat less.

Of course I don't make giant schnitzels like they do in pubs and restaurants, I make them smaller, about a third or a quarter of the size. I like to have room on my plate for vegetables or salad. 

And some of my schnitzels are skinny enough to be called chicken strips, to be served with rice and Asian style lemon sauce, and there are the small "tail end" bits cut off some of the schnitzels which are now my version of "nuggets", to be served with home made hot chips.

  1. I was roasting a few breasts for sandwiches this morning as I'm
    not allowed deli meats anymore because they are so full of salt. I love schnitzel. Haven't had it in years.

  2. We live in a crazy world and even if we didn´t ... you do it the right way, I think!
    The very few times we make it to KFC I always am surprised about the amount people eat!
    We share 6 chicken nuggets and feel good and fed.
    We are (healthy) cheapie´s.

    1. Iris; I'm amazed at how much they eat too. My own sons can almost eat a bucket of chicken on their own. I haven't been to KFC in a long time. I did once get off the bus by the KFC stop and bought a serve of fries (chips) to eat while I walked the rest of the way home. I know I often eat too much, but making my own is far cheaper.

  3. P.S in Germany it was a goose. Mum always let the goose loose all it´t fat when roasting and we had it for three days. With veggies and all of course!
    Bro did it once when Mum was gone but it was too much work.

    1. Iris; I remember the geese. Mum always raised a few for the Christmas dinner table for people who ordered them. Ducks too, as well as the chickens. I got to be good at ripping out the feathers, but I never did the guts.

      In grade 7 saw a docu on mass animal production and could not eat meat for a long time.
      Must be even worse when you know the animal?

  4. Had to look up schnitzel. Sound really good. I just bought a little over a pound of chicken tenders for $9.96. Like you though I can make that last for seven meals. Bird flu hurt us here also as they had to destroy so many chickens. Sigh.

    1. Arkansas Patti; I'm surprised you never heard of schnitzel. Maybe if I had said crumbed chicken you would have known. But I thought the whole world knew about chicken schnitzel, although many people use veal or pork instead of chicken. I hope the bird flu is gone now. In Australia we are having trouble with bees being infected by something and many hives are being destroyed, so the price of honey will no doubt go up soon.

    1. Mike; cutlet? Cutlet is what we call a lamb loin chop that has had the fat trimmed away from the bone. I suppose there are other things called cutlets that I don't know about. We should all write occasionally on our blogs about a food that we think is unique to our country.

  6. I well remember when chicken was a 'high days and holidays' meal. Himself now eats quite a lot of it, and may have to change his ways a bit.

    1. Elephant's Child; I remember when chicken was the Christmas dinner bird and they always seemed so big. We ate the dinner and had leftovers for a couple of days, then the carcass went into the soup pot.

  7. It is about 20 dollars for an organic , cold processed chicken that will feed four. Last year it was nine dollars, last year a pound of local organic coffee was $6.95 , yesterday it was $14,.00, so, yes , change is in the wind.

    1. Linda Sue; I never buy the organic things, they are too expensive for me, but I see the prices going up. When I was very young and later as a teenager, we ate organic meats, Mum raised them in the backyard, and they were so tasty.

  8. It is difficult for so many these days. I wish wages would be fair, and a living wage. We should all be able to afford food and shelter.

    1. Jenn Jilks; I see them here, the homeless people and wish I could help, but I'm stretched pretty thin, with feeding myself and Lola and putting aside enough to cover unexpected bills and to help the kids if they need it.

    1. Joanne; mine is down weekly because I buy very little, until the freezer is empty, then I have a big spend up and start making all the frozen meals again. About every eight weeks or so.

  11. Food and every thing is so expensive. Hubby and I was talking about my retirement. We get monthly food box because my husband social security (Retirement check) is at certain level. Once I retire I can to get food box. To help the food budget go farther.

    1. Dora; the food boxes are a great idea. Do other people know about them or are they ashamed to ask because they don't want "charity". I would rather have food to eat than be ashamed and go without.

  12. I don't eat schnitzel but eat chicken have lots in the freezer which I purchased recently. Poultry and meat has become rather expensive but we still eat it every evening meal for the 3 to 5 of us, or we eat a lot of fish as well.

    1. Margaret D; I like schnitzel, I make it with a mix of plain store bought fine crumbs and a box of herb and garlic flavoured crumbs. I only eat red meat in a beef casserole or a beef pot roast these days. Steak is way out of my budget now.

I have been kind of forced into buying a deli roasted chicken every week because that's the only kind of meat my mother will eat now and it's easier to buy a whole one and cut a piece for her than it is to ask the staff to do it (cheaper too). But I'm beginning to feel like I might start clucking, I'm having so much of it! The price has gone from $8 to $12 over the past year and a half. Everything is going up -- a lot. Some companies have hidden it better than others by having the package size get smaller and the price staying the same, but I don't know who they think they're fooling ...

  14. I remember when chicken was a Sunday roast / special occasion kind of thing. My son in law will eat a half chicken at a meal which is odd when you think how a chook used to feed a whole family
