For Iris - cheese toasties - the old fashioned way

 We made these for weekend lunches and after school snacks in winter when I was much younger, and I still make them now. Made them for my own kids too.


start with your non-stick frypan


turn the heat to high


two lightly buttered slices of bread


pre-sliced cheese but NOT that individually wrapped stuff, that's awful. You can slice your own cheese if you prefer to not buy pre-sliced.


two slices of cheese (one is okay but two is better)


two spatulas for turning the sandwich


put one slice of bread into the hot pan, buttered side DOWN


add the cheese


add the second slice of bread buttered side UP, let it brown on the underside


one spatula under the sandwich to flip it, the other holding the second slice of bread in place


let the second side brown. If you flip too soon and it isn't browned enough just flip it back


place the sandwich on the upper half of a folded piece of paper towel

fold the paper up to hold the sandwich so your fingers don't get greasy. Yum. 

Don't forget to turn off the stove.

Ham or sliced tomato in between the cheese slices is nice.

Do NOT go and read blogs while the sandwich browns because it WILL burn. How do I know this? Hah (*~*)

  2. Ha! My mom always said you can't cook and do ANYTHING else. You just have to pay attention to the cooking.

    In the states we'd call this a grilled cheese.

    1. Steve Reed; I remember they're grilled cheese over there. Some people here call them toasted cheese, but I like cheese toasties. There are some things where you can walk away from the stove, simmering soup for example, but you still need to go back and check now and again.

  4. Those are so good. My favorites have tomato and a bit of mayonnaise, and if served with a bowl of soup and some salad, it can be a substantial enough dinner.

    1. messymimi; I could never put mayonnaise in them but have done tomato or ham. They are good with soup for a quick dinner.

    (And Oh, boy... being in the title and late!!!)
    We have but those these day "normal" pans and sadly no BEGA. Oh, how I miss that cheese! I think you would be sad living here. No... what is COON now named, either. But Ingo got that bread! And I think those now-normal-pans will work, too.
    No reading blogs inbetween... checked.
    I think I´ll use tilsit-cheese?

    1. Iris; you are only late because we get Monday hours before you do. Any pan will work, it doesn't have to be non stick. Coon is now called Cheer and any cheese that you like the taste of will work as long as it melts easily.
      I would be sad living there because of the cold and no big sandy beaches.

      Yes, the cold and ... we do have sandy beaches (300+ km away), but it is cold!!! 15C right now - do you call the late spring/early summer??? Brrrr...

  7. And! Since I suggested asparagus (season is till end June and I don´t like the white one even) I got Ingo real butter - perfect, huh?

    1. Iris; I don't like asparagus, but if buying it means you get real butter that's good. Although margarine works too if you can get that in Germany.

    2. Yes, Ingo said margarine would work... but when you spend a lot of money on that darn asparagus I add the money (and footsteps and wait in line) for the butter to make it perfect... for him...

  8. Yes indeed. I still make them now, but as you say tomato slices and sliced hardboiled egg make the sandwich tastier. Grated black pepper on the tomato adds flavour as well.

    1. Hels; I've never tried them with hard boiled egg, I just eat the egg by itself as a quick lunch. Of course pepper on the tomato.

  9. Now I'm hungry. With ham for me, please, and making those are like boiling milk. Don't look away! Also I love a cheese with small bits of chilies in it for this, and real butter. Like Iris we're having a cold spell with 15-17 decgrees, windy changing clouds and showers, but the beach is not far - only 5 km - and soon it will be hot enough to go there.

    1. Charlotte; mostly I just use cheese, but if there is ham in the fridge I will put that in the sandwich. We had17C here most of last week and I had the heaters running all day and half the night. I turn them off when I go to bed because the bed is warm enough with all the quilts/doonas/duvets, whatever you call them in your country. Lucky you to have a beach so close, like I do, though mine is a bit further away, but Iris has 300km between her and a beach! This week we are up to 18C-20C with plenty of clouds so the air isn't frosty.

    1. Susan Kane; I have never bought flour tortillas, always bread in different varieties. We all prefer white bread for the cheese toasties, but other breads for other sandwiches. I like rye bread, two of the kids like multigrain wholemeal, one eats anything that's put in front of him and the oldest doesn't eat bread at all.
